This delicious spinach and artichoke pasta with chicken sausage is absolutely scrumptious and a hearty dinner recipe loaded with spinach, artichoke hearts, sliced chicken sausage, and rotini pasta in a creamy tomato-based sauce.

I love pasta. It’s so good in so many things. From bakes to spaghetti, ravioli, and more, pasta is definitely one of my major food groups. What I tend to do most often with pasta is make bakes and skillets. They’re just so easy to make with noodles. They’re also so versatile. You can combine almost anything with pasta and create something delicious. That’s exactly what I did with this spinach and artichoke pasta skillet. It’s a delicious, hearty dish that’s perfect for feeding a hungry family or as a delicious addition to any get-together or potluck.

Spinach and Artichoke Pasta with Chicken Sausage

This delicious pasta skillet is loaded with chicken sausage, spinach, artichokes, and cheese. This delicious dish is loaded with flavor, and it’s guaranteed to fill up even the biggest eaters. All of the delicious flavors of this recipe come together with rotini noodles to create a cheesy pasta dish that’s so good and so easy. It even has a nice little kick to it from the addition of the Slap Ya Mama seasoning.

This dish is so simple because it takes advantage of canned and jarred ingredients. The artichoke hearts are jarred, saving you the time of cutting fresh artichokes down to the heart. In addition, you can substitute the freshly minced garlic and diced onions with their dried counterparts if you desire to make the recipe even easier and still retain all that great flavor. This is one of those dishes that tastes like it took hours, but you’ll actually be in and out of the kitchen extremely quickly.

The best part of this recipe is how easy it is to play with it. You can make all sorts of little changes to create variations of the dish or an entirely new one. It’s all up to you and how much you want to change things up. That’s the fun! One recipe can make several different dishes.

Different Sausage

I used chicken sausage for this recipe, but you can use any kind of sausage that you love. They’ll all work in this recipe. Some of my favorites are:

  • Chicken sausage
  • Italian sausage
  • Summer sausage
  • Polish sausage
  • Breakfast sausage links (it’s actually really good)

Different Pasta

I love the way rotini captures sauce and liquid in recipes like this, but any kind of short pasta will work in much the same way. Feel free to use any of your favorite shapes like:

  • Rotini
  • Macaroni
  • Ziti
  • Penne 
  • Rigatoni
  • Rocchetti

Different Cheese

Mozzarella is the ultimate cheese for Italian and Italian-inspired dishes, in my opinion, but again, the great thing about this recipe is how easy it is to play with it. Feel free to use any of your favorite cheese varieties in this recipe to change the flavor to your liking.

Add Vegetables

This particular pasta skillet lends itself very well to adding extra veggies into the mix. Get creative and add in some of your favorites. You can put just about anything in there that you like. I’m partial to things like mushrooms and bell peppers, but you can really choose anything.

Place it in an air-tight container in the refrigerator for up to 5 days. You can freeze it for up to 3 months in an air-tight, freezer-safe container or heavy-duty freezer bag. To reheat leftovers, place desired amount in a microwave safe dish, cover with a paper towel and heat until hot. To heat in a pan, add desired amount add a little water and heat over low flame until heated through.

It only takes a few simple ingredients to make this hearty meal, and you can find them all easily at your local grocery store.

  • Rotini noodles
  • Olive oil
  • Onion
  • Garlic cloves
  • Chicken sausage, sliced
  • Crushed tomatoes
  • Artichoke hearts, quartered
  • Slap Ya Mama®
  • Black pepper
  • Oregano
  • Parsley
  • Red pepper flakes
  • Fresh baby spinach
  • Mozzarella cheese, shredded
  • Parmesan cheese, shredded

How to Make Spinach and Artichoke Pasta

This is one of the easiest pasta skillets you’ll ever make. It only takes a few simple steps to create a rustic dish that will have everyone coming back for more and get you in and out of the kitchen in no time.

Step 1: Cook the Pasta

In a large pot, bring pot of water to a boil over medium-high heat. Cook the pasta per the package instructions for al dente. Drain, rinse and return to pot.

Step 2: Cook the Onions and Sausage

In a large skillet, heat olive oil over medium heat. Then, add the sausage, onions, and garlic. Cook until the sausage is browned and the onions are translucent.

Step 3: Make the Sauce

Once the sausage is browned, add the quartered artichoke hearts and crushed tomatoes. Then, add in all the seasonings and stir until combined. Let the mixture cook for 6 – 8 minutes until the sauce starts to boil, then add the fresh spinach. Slowly stir in the parmesan and mozzarella cheese.

Step 4: Putting it all Together

Pour the sauce over the cooked pasta, stir, salt and pepper to tastes and enjoy.

Ingredients
  

  • 16 ounces Rotini noodles
  • 1 tablespoon olive oil
  • ½ cup onion diced small
  • 3 cloves garlic minced
  • 12 ounces chicken sausage sliced
  • 15 ounce can crushed tomatoes
  • 12 ounce jar artichoke hearts quartered
  • 1 teaspoon oregano
  • ½ teaspoon Slap Ya Mama®
  • ½ teaspoon black pepper
  • ½ teaspoon parsley
  • ¼ teaspoon red pepper flakes
  • 3 cups fresh spinach, cut into smaller pieces
  • 1 cup mozzarella cheese shredded
  • ½ cup parmesan cheese shredded

Instructions
 

  • In a large pot, bring pot of water to a boil over medium-high heat. Cook pasta according to the package for al dente. Drain, rinse and return to pot.
