Ingredients
  

Hot Chicken

  • 2 boneless skinless chicken breasts, cut in half lengthwise and cut into 4-6 pieces depending on size of breast
  • 2 cups buttermilk
  • ½ cup pickle juice
  • ¼ – ⅓ cup hot sauce, depending on desire of spiciness
  • 2 cups all purpose flour
  • 1 teaspoons Slap Ya Mama seasoning
  • 2 teaspoons garlic powder
  • 2 teaspoons black pepper
  • 1 teaspoon red pepper flakes
  • 1 teaspoon cayenne pepper
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • Oil, for frying
  • 12 Slider buns
  • Coleslaw
  • Sliced pickles

Hot Oil Rub

  • 2 teaspoons Slap Ya Mama
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon red pepper flakes
  • ½ cup hot oil, from pan after frying chicken

Instructions
 

  • In a large bowl, add chicken. Pour buttermilk, pickle juice, and hot sauce over chicken. Stir to combine. Cover bowl with a lid or plastic wrap and let marinate in the refrigerator for at least 2 hours.
  • In a shallow dish, stir together flour and seasonings.
  • Remove chicken from the refrigerator and dip each piece of chicken into the flour mixture, then back into the marinade mixture, and back into the flour mixture. Make sure to cover completely.
  • Heat oil over medium heat in a large pan.
  • Place 3-4 pieces of coated chicken pieces into the hot oil and fry on both sides until golden brown with an internal temperature of 165 degrees.
  • Remove fried chicken pieces and place on a paper towel lined plate to absorb any excess oil.
  • Repeat with all coated chicken pieces.
  • In a small bowl, mix together hot oil from the frying pan and seasonings until well combined.
  • Brush hot oil mixture over both sides of fried chicken pieces.
  • Assemble sliders by adding a piece of chicken, topped with coleslaw, and a few sliced pickles.
