If you’re ready to take your BBQ game to the next level, these maple pecan jalapeno smoked ribs are exactly what you need. They’re smoky, sticky, sweet, and just the right amount of spicy, basically everything you want in a rib recipe.

How to Make Maple Pecan Jalapeno Smoked Ribs

Step 1: Remove the silver skin from the ribs. Then, cut them apart, leaving a little meat on each side, and slather each rib with mustard.

Step 2: Next, coat each rib in the spice blend. Smoke the ribs, bone-side down, for 1 ½ hours.

Step 3: Whisk the BBQ ingredients and set aside. Remove ribs from the smoker and place into a baking dish, or foil baking dish, in a single layer.

Step 4: Pour the BBQ sauce mixture over the ribs, cover with foil, and smoke for another hour. Then, remove the foil and smoke until caramelized. Enjoy!

Ingredients
  

  • 3 ½ pounds rack pork baby back ribs
  • ⅓ cup yellow mustard

Pork Rub Seasoning

  • ¼ cup brown sugar
  • 1 tablespoon salt
  • 2 teaspoon paprika
  • 1 teaspoon granulated garlic
  • 1 teaspoon black pepper
  • ½ teaspoon onion powder
  • ½ teaspoon cayenne pepper
  • ½ teaspoon cumin

Spicy Maple Sauce

  • 1 ½ cups pecans
  • 1 ½ cup bbq sauce
  • ⅓ cup maple syrup
  • 2 jalapenos, stem removed, sliced

Instructions
 

  • Preheat the smoker to 240°.

Pork Ribs

  • Remove the rack of ribs from packaging and place the fat side down.
  • With the ribs facing you, make a sliver into the thick opaque skin covering the backside of the ribs.
  • With a knife or piece of paper towel remove silver skin from bones.
  • Slice each rib, leaving a little meat on each side of the bone.
  • Slather each individual rib with mustard.

Pork Rub Seasoning

  • Add the brown sugar, paprika, granulated garlic onion powder, cumin, cayenne pepper, salt, and pepper to a small bowl, and mix until combined.
  • Heavily sprinkle pork rub and pat into each of the ribs to make sure it’s adhered.
  • Place on the smoker, directly on the grill grates, bone side down.
  • Smoke for 1 ½ hours.
  • While the ribs are smoking, make your bbq sauce.

Spicy Maple Sauce

  • Slice jalapenos in rings, leaving the seeds for extra heat.
  • In a medium sized bowl, whisk together the barbecue sauce, maple syrup, pecans, and jalapenos.
  • Remove ribs from the smoker and place into a 13 x 9 baking dish, or a foil baking dish.
  • Pour the barbecue sauce mixture over the ribs, making sure to cover each one.
  • Cover with foil and return to the smoker.
  • Smoke for 1 hour.
  • Remove foil, and smoke for an additional 30 minutes.
  • Let rest for 10 minutes, before serving.
