If you’re ready to take your BBQ game to the next level, these maple pecan jalapeno smoked ribs are exactly what you need. They’re smoky, sticky, sweet, and just the right amount of spicy, basically everything you want in a rib recipe.

The combination of maple syrup, crunchy pecans, and jalapeños creates a bold glaze that caramelizes beautifully over tender, fall-off-the-bone ribs. Trust me, these are the kind of ribs people talk about long after the cookout is over.
They’re the perfect summer feast when served alongside smoked corn on the cob, potato salad, and one pot mac and cheese.

Key Ingredients
You’ll find the full list of ingredients and their amounts in the recipe card at the bottom of the post.

- Pork Baby Back Ribs: They’re tender, juicy, and perfect for soaking up all that smoky, saucy flavor.
- Yellow Mustard: It sounds simple, but it’s key. It helps the seasoning stick to the ribs and adds a subtle tang in the background.
- Brown Sugar: This brings sweetness and helps create that nice caramelized crust on the outside of the ribs.
- Spices: A blend of paprika, garlic powder, onion powder, cumin, and cayenne gives the ribs that smoky, savory, slightly spicy kick that makes them taste like legit BBQ.
- BBQ Sauce: The main flavor booster. It coats the ribs, adds richness, and gives you that sticky, finger-licking finish.
- Maple Syrup: This takes the sauce up a notch—adds a deeper sweetness and helps everything get nice and glossy.
- Jalapenos: These bring a little heat to balance out the sweetness, so it’s not one-note.
- Pecans: A bit unexpected, but they add crunch and a nutty flavor that makes the sauce more interesting and unique.
Variations
- Swap Honey for Maple Syrup: Honey offers the same sweetness with a different flavor profile.
- Add Heat: Add crushed red pepper for extra heat.
- Swap the Nuts: Walnuts work great in place of pecans.
- Change Up the Ribs: Try using spare ribs or St. Louis- style ribs.
How to Make Maple Pecan Jalapeno Smoked Ribs

Step 1: Remove the silver skin from the ribs. Then, cut them apart, leaving a little meat on each side, and slather each rib with mustard.

Step 2: Next, coat each rib in the spice blend. Smoke the ribs, bone-side down, for 1 ½ hours.

Step 3: Whisk the BBQ ingredients and set aside. Remove ribs from the smoker and place into a baking dish, or foil baking dish, in a single layer.

Step 4: Pour the BBQ sauce mixture over the ribs, cover with foil, and smoke for another hour. Then, remove the foil and smoke until caramelized. Enjoy!
Expert Tips
- You can have your butcher remove the silver skin for you.
- Keep your smoker lid closed while the ribs cook to maintain an even temperature.
- If using wood chips, soak them for at least 30 minutes, so they smoke rather than burn.
- Let the ribs rest before serving so the juices can redistribute.
