Crock Pot Italian Green Beans

Ok friends, here is a delicious side dish that you are going to fall in love with. Crock pot Italian green beans are my new favorite side dish. My dear friend Jennifer and I had stopped off for dinner, after a super long admission at the VA home. I’m the admission RN for hospice and she is now a RN Supervisor at the Veteran’s Home. After those type of long days, we will usually stop and get something to eat before I head home to finish up my charting for the night and on this night, oh man, the food was amazing.

We stopped at a little diner I hadn’t been to before and Jennifer had asked me if I have ever tried Italian green beans. I never had and decided I’d order some to go with my chicken fried steak and mashed potatoes. LET ME TELL you this…. They were DELICIOUS!

Well I tried to get the waitress to tell me all the ingredients that made these Italian green beans so fabulous but that didn’t happen. So the recipe below is my take on these delicious green beans.

Great side dish you will love

For this recipe I decided to use my smaller crock pot, instead of cooking them on the stove, because you can never go wrong using a crock pot. Love, love, love using a crock pot. I actually started these at 10 pm on Saturday night so they would be ready for their picture debut Sunday, mid morning. Also, sitting right beside these Italian green beans was a large crock pot with corned beef cooking that I will post later. The house smelt heavenly about 3 am!

If you are a green bean lover, you certainly will appreciate the wonderful flavor these beans have. The Italian dressing is what mainly gives these green beans their delicious flavor. If you have bacon grease saved (I know lots of others who save their bacon grease) this would be a perfect time for adding some to the crock pot at the beginning, along with the rest of the ingredients. Then just fry up some bacon when the green beans are almost ready.

Crock Pot Italian Green Beans

Ingredients
  

  • 24 oz fresh green beans, chopped to desired length
  • 1/2 cup butter, 1 stick
  • 1/4 cup chopped onions
  • 1/2 cup Italian dressing, I used Wishbone
  • 1 cup water
  • 1/2 tsp garlic salt
  • 1/8 tsp pepper
  • 3 strips bacon, crispy, save grease.

Instructions
 

  • In a small crock pot, add chopped onions, fresh greens beans, butter, Italian dressing, water, garlic salt and pepper. Lightly stir.
  • Cover and cook on low for 8-10 hours.
  • While the green beans are cooking and almost done, cook bacon.
  • Remove from pan and place on a plate lined with paper towels.
  • Pour bacon grease into crock pot, stir.
  • Let cook for another hour.
  • Crumble bacon and add to crock pot. Stir and enjoy.

6 tomatillos 4 jalapenos, stems removed 3 serranos, stems removed 2 cloves garlic, roasted ¼ onion ¼ cup water 2 teaspoons salt 2 avocado, diced ⅓ cup cilantro In a medium saucepan, add oil and heat over medium heat. Add garlic cloves and roast until soft. Remove and add to blender or Vitamix. In the same saucepan, add tomatillos, jalapenos, serranos and onion. Cover with cold water and bring to a boil over medium high heat until soft and the color has changed to a pale green. Remove tomatillos and continue boiling the peppers until pale green, if needed. Drain water, reserving ¼ cup. Add the cooked ingredients, salt and ½ cup water. Blend until combined and smooth. Lastly, add avocados and cilantro and blend until smooth. Serve with your favorite chips or top tacos, burritos, beef, chicken or your favorite Mexican recipes.
