Chocolate Walnut Fudge

Making fudge is something I do usually only once or twice a year. There is just something about a good piece of rich, creamy, chocolaty fudge. This Chocolate Walnut Fudge is definitely creamy and very rich. I love this time of year for all the different delicious recipes pertaining to Fall, Christmas and the holiday season.

I decided that today was the day to make fudge. I really wanted to make it Vegan but that didn’t happen. So for all you non-vegans, this one is for you.

Craving chocolate doesn’t happen as much as it used to, but today the craving hit hard. So why not? A delicious batch of rich, creamy fudge was just what was needed. This is definitely sweet and if you are craving something chocolaty and sweet, this will seriously hit the spot.

Ingredients
  

  • 3 cups of semi-sweet chocolate chips
  • 4 cups mini marshmallows
  • 1 cup walnuts, chopped
  • 1 cup butter
  • 2 tsp vanilla
  • 1 12 oz can evaporated milk
  • 4 cups sugar

Instructions
 

  • In a large bowl, add chocolate chips, marshmallows, vanilla and butter. Set aside.
  • In a medium pan, stir sugar and evaporated milk together over low heat until boiling, stirring constantly.
  • Once boiling, cook for approximately 8 or 9 minutes, stirring constantly.
  • Next, pour mixture over chocolate chips, marshmallows, butter and vanilla. Stir until well incorporated.
  • Add walnuts, stir.
  • Pour into a 9 x 13 baking dish, lined with parchment paper or foil.
  • Let cool overnight. Make sure to cover with foil after it cools a bit.
  • Once fudge has cooled, cut into 1" squares.
  • To store, place into a sealed container with wax paper in between each layer.

    I made this special batch just for my Dad , it turned out great !!!!!!!!!!! Any tips on how I can send it to him ?? Possibly freeze it before hand ?! Thanks for sharing this recipe my daughter and I had a blast making it ! ?

      That’s awesome! I’m glad you and your daughter had a great time making it. How I normally ship stuff like this is making sure you have wax paper between the layers. I use those rectangle “Tupperware-like” containers (2 of them fit perfectly in a priority box from the post office). Not sure how far you’ll be shipping this fudge but it should be fine shipped just like that. Thank you for sharing! :)

    It says it needs to cook over night do you do it in the fridge?

      Hi Alison, I would say that if you kept it in the fridge in an air tight container, it should stay fresh for a couple weeks. Congratulations on your upcoming wedding! :)

6 tomatillos 4 jalapenos, stems removed 3 serranos, stems removed 2 cloves garlic, roasted ¼ onion ¼ cup water 2 teaspoons salt 2 avocado, diced ⅓ cup cilantro In a medium saucepan, add oil and heat over medium heat. Add garlic cloves and roast until soft. Remove and add to blender or Vitamix. In the same saucepan, add tomatillos, jalapenos, serranos and onion. Cover with cold water and bring to a boil over medium high heat until soft and the color has changed to a pale green. Remove tomatillos and continue boiling the peppers until pale green, if needed. Drain water, reserving ¼ cup. Add the cooked ingredients, salt and ½ cup water. Blend until combined and smooth. Lastly, add avocados and cilantro and blend until smooth. Serve with your favorite chips or top tacos, burritos, beef, chicken or your favorite Mexican recipes.
