For The Chocolate Cookie Bites
- Preheat the oven to 350° and spray a mini muffin pan with nonstick cooking spray.
- In a large bowl, beat together butter and sugar until light and fluffy, and fully mixed.
- Add eggs and vanilla, mix well.
- In a medium bowl, whisk flour, baking soda, baking powder, salt, and cocoa powder.
- Add dry ingredients into wet ingredients and mix until fully combined.
- Fill each mini muffin ¾ full.
- Bake for 15-17 minutes or until the center of the cookie cup is set.
- Remove from oven and let cool completely. While cooling, use the end of a spoon to press a hole in the middle of each cookie cup.
