This easy copycat Chipotle corn salsa is loaded with all the flavors we love about the original. Only a few ingredients are needed to make this homemade version of the popular corn salsa from Chipotle.

I’ve been cooking since I was young. As I got older, my love of cooking never lessened. Over the years, I’ve made all kinds of recipes. However, the ones I tend to enjoy making the most are copycat recipes. I just love the challenge of trying to replicate the flavors of my favorite restaurant dishes. As a cook, it’s a challenge that’s both fun and rewarding. In this case, the reward is a delicious corn salsa that tastes just about as close as you can get to the Chipotle original without using their recipe.

Chipotle Corn Salsa

This corn salsa is loaded with all the flavors we love about the original. Corn, diced jalapenos, diced red onion, cilantro, and a Cajun twist of Slap Ya Mama seasoning come together to create a copycat corn salsa that is as good or better than the original. I actually like it more because of the addition of the Slap Ya Mama. It’s a light, fresh dish with a ton of flavor and a spicy kick that’s perfect with almost any kind of recipe.

Variations

This recipe is so simple that I have zero tips. You literally cannot mess up this recipe, which is great! I do have some fun variations, however, that I think you’ll enjoy.

  • For a milder version of this recipe, remove the seeds from the jalapenos.
  • You can use frozen corn or fresh corn to make this recipe, as well.
  • For deeper flavor, roast the jalapeño peppers before dicing them.
  • For even more flavor, add a roasted poblano pepper.
  • And, for more flavor and color, try adding diced red and green bell peppers.

6 tomatillos 4 jalapenos, stems removed 3 serranos, stems removed 2 cloves garlic, roasted ¼ onion ¼ cup water 2 teaspoons salt 2 avocado, diced ⅓ cup cilantro In a medium saucepan, add oil and heat over medium heat. Add garlic cloves and roast until soft. Remove and add to blender or Vitamix. In the same saucepan, add tomatillos, jalapenos, serranos and onion. Cover with cold water and bring to a boil over medium high heat until soft and the color has changed to a pale green. Remove tomatillos and continue boiling the peppers until pale green, if needed. Drain water, reserving ¼ cup. Add the cooked ingredients, salt and ½ cup water. Blend until combined and smooth. Lastly, add avocados and cilantro and blend until smooth. Serve with your favorite chips or top tacos, burritos, beef, chicken or your favorite Mexican recipes.
