Easy Chicken Tortilla Soup Recipe

When it comes to a delicious comfort meal, you are going to love this Chicken Tortilla soup. This soup has so much flavor and is so easy to make. A super scrumptious, one pot meal, which makes cooking and clean up a breeze. If you are a chicken soup lover, you are certainly going to enjoy this easy, homemade soup.

Can This Soup Be Made with Cooked Chicken

If you do not have chicken breast on hand or want a way to use leftover chicken, you can use cut up pieces of chicken. I like to use rotisserie chicken as a shortcut for this amazing Chicken Tortilla Soup. Shred the chicken or cut it into small bite sized pieces and then you can add this to the soup.

What is Slap Ya Mama Seasoning

Slap Ya Mama Cajun Seasoning is a combination of Salt, Red Pepper, Black Pepper and Garlic. Some people will use Old Bay Seasoning for Slap Ya Mama Seasoning, but you can also just use a combination of Cajun seasoning for the best flavor.

How to Store Chicken Tortilla Soup

This is one of those soups that are better after each day. The flavors come together more and more and will taste amazing no matter if it is fresh or as leftovers. You will want to wait until the soup has cooled before moving it to an airtight container.

What is the Easiest Way to Shred Chicken

I have found that the easiest way to shred chicken is when it is still hot but not too hot to touch using the mixer. If you add the chicken to mixer and use the beater, it will shred the chicken in no time.

Another way to shred the chicken is to just use 2 forks. Again do this while the chicken is hot, but that you are able to handle it. Use the forks to pull the chicken apart and into nice shredded pieces.

What Kind Of Toppings Go on Chicken Tortilla Soup

When you make this soup, you will want to serve it while it is hot or warm. There are a lot of things that you can add as part of the toppings. You can add cheese, cilantro, sour cream, avocado, sliced green onions and more tortilla strips to the top. You can also add salsa to the soup if you want another layer of flavors.

If you want something to serve with the chicken tortilla soup, I would recommend a side salad or crusty bread.

Ingredients for Chicken Tortilla Soup

  • Chicken breast
  • Onion
  • Garlic
  • Diced green chilies
  • Corn
  • Chicken broth
  • Fire roasted tomatoes or crushed tomatoes
  • Black beans
  • Oregano
  • Chili powder
  • Red crushed peppers
  • Slap Ya Mama™
  • Green onions
  • Pepper
  • Tortilla strips

How to make Chicken Tortilla Soup

  • In a large stock pot, add chicken breasts and add the onions, cover with water and bring to a boil.
  • When chicken is cooked, drain water, shred and return chicken and onions back to pot.
  • Add garlic, green chilis, corn, chicken broth, tomatoes, black beans, green onions, oregano, chili powder, red crushed peppers, Cajun seasoning and pepper to pot.
  • Stir together and cook for an additional 30 minutes over low heat.
  • Top each bowl of soup with corn tortilla strips.
  • Optional: garnish with cheese, sour cream, avocado, fresh cilantro and a lime wedge.

Ingredients
  • 3 chicken breast, boneless, skinless, shredded
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 4 oz can diced green chilies
  • 15 oz can black beans, drained & rinsed
  • 15 oz can whole corn, drained
  • 14.5 oz can fire roasted diced tomatoes or crushed tomatoes
  • ¼ cup green onions, sliced
  • 4 cups chicken broth
  • 1 tsp oregano
  • 1 tsp chili powder
  • ½ tsp red crushed peppers
  • 1 tsp Slap Ya Mama
  • ½ tsp pepper
  • 1-2 cups tortilla strips
  • Optional: garnish with jack cheese, sour cream, avocado, cilantro, green onions and a lime wedge.
