Cheesy Ground Beef Enchiladas

These easy beef enchiladas are great because the recipe is such a simple process to follow and are super easy to make. There have been too many times in my life that I’ve attempted recipes that just left me scratching my head, and thankfully this isn’t one of the last. Because let’s face it…at the end of a busy day, the last thing that we all want or need is to have to try to create a super difficult recipe on top of everything else going on.
We love having this recipe during the week because it’s fast, delicious, and packed full of awesome flavor. I love knowing that I can easily prep this a bit beforehand as well which can even save me even more time in the long run!
Are enchiladas made with corn or flour tortillas?
While this recipe uses flour tortillas you could easily make it with corn tortillas as well. Just know that the taste and texture will be quite different if you do decide to swap out and use them. Many people who are gluten-free choose corn tortillas but you also have to make certain that you’re verifying if the other ingredients in this recipe make it gluten-free or not. We don’t have to worry about flour allergies in our family so we use the flour tortillas.
What is the difference between a burrito and an enchilada?
The main difference between a burrito and an enchilada is that you’re going to eat a burrito with your hands and you’re going to eat an enchilada with a fork and one reason is because the sauce and melted cheese.
What can I put in enchiladas?
This is why we love to eat enchiladas in our house! You can literally add whatever you would like to him. While this specific enchilada recipe calls for ground beef, you could always do shredded beef or chicken just as easily, or even more vegetables. Then, you can decide if you want to eat them mildly as the recipe calls for or spice it up a bit with some extra jalapenos or hot sauce.
If you can keep track of which enchiladas are which, you can even make a variance in the same pan to try to give everyone what they want.
How do you freeze enchiladas?
Freezing enchiladas can be a great way to have them later to enjoy as well. The easiest way to freeze your enchiladas is to wrap them tightly and securely with saran wrap so there is no air or holes, then wrap again with aluminum foil, then place them in your freezer for later. I always like to write on the outside with permanent marker as well as to what is inside, just in case I happen to forget!

Ingredients Needed To Make Cheesy Ground Beef Enchiladas
- Ground beef
- Onions, garlic
- Cumin
- Slap Ya Mama® seasoning
- Pepper, Red pepper flakes
- Diced jalapenos (or diced green chilies)
- Enchilada sauce
- Sliced black olives
- Monterey Jack cheese
- Sharp Cheddar cheese
- Flour tortillas

How To Make Cheesy Beef Enchiladas
- In a large frying pan or skillet cook ground beef over medium high heat, add onions and cook until meat is no longer pink.
- Add garlic to beef mixture and cook for an additional two or three minutes stirring occasionally. Drain grease and return to pan.
- Sprinkle seasonings, pepper red pepper flakes and jalapenos over ground beef. Stir.
- Pour large can of enchilada sauce into meat mixture, stir until combined and heat over medium flame until hot and bubbly.
- Open smaller enchiladas sauce and pour a little bit into prepared baking dish. Set aside.
- Take one tortilla at a time, add a couple heaping spoonfuls of meat mixture into center of tortilla followed by both types of cheese and a 5-6 olives.
- Roll and place each enchiladas seam side down in the baking dish.
- Once the bottom layer is filled, pour a little more enchilada sauce on top and then repeat by placing the remaining enchiladas on top of the first layer.
- Next, add any leftover meat mixture on top of the enchiladas then pour the remaining enchilada sauce over the enchiladas, top with remaining cheese and then add the olives.
- Cover with foil and place on a baking sheet to catch any spillage.
- Bake for 60 minutes or until cheese is hot and bubbly.
- Carefully remove from oven and serve with sour cream, slice green onions, cilantro and sliced avocados, optional.

- 15 oz can red enchilada sauce
- 6.5 oz can black olives, sliced
- 3-4 cups sharp cheddar cheese, shredded
- 3-4 cups Monterey Jack cheese, shredded
- 16 large flour tortillas
Instructions
- Preheat oven to 375° and spray a 13 x 9 baking dish with a non stick spray right before filling.
