I’ve always loved to cook for my family, but these days, it’s so much more of a treat. Now that the kids have grown up and had kids of their own, making lunch or dinner for them is extra special because it’s not something I do every day. Now, when we have dinner together, it’s full of catching up, laughing, and enjoying each other’s company. That’s why I try to make dishes like this one that allows me to serve up something super delicious but won’t leave me stuck in the kitchen wasting all that time I could be spending with my kids and grandkids. This is so quick and easy that I can just throw everything together, toss it in the oven, and get back to visiting.

Sheet Pan Sausage and Potatoes with Corn

This recipe uses a sheet pan, and that’s it. It doesn’t get much simpler. Smoked sausage, baby potatoes, and corn are mixed with a simple seasoning mix that’s kicked up with a little red pepper and Slap Ya Mama Cajun seasoning. Then it’s just baked and served. It doesn’t get much easier than that, AND being that easy doesn’t sacrifice any flavor. You can’t beat that. This is a great family dinner recipe for busy weeknights, or if you make a few batches of it, it’s the perfect addition to any potluck. Trust me, you’ll never have any leftovers.

Ingredients
  

  • 2½ pounds baby creamer potatoes
  • 6 mini ears of corn, cut each into 3 pieces
