Poppy Seed Coleslaw Salad

This poppy seed coleslaw salad is SO EASY to make and is super tasty! We used to have potlucks all the time at my other nursing job. This recipe is one that my friend Kim makes quite often! Oh man, everyone enjoyed this salad every time she brought it to our potlucks. The one thing about this poppy seed coleslaw salad is that it is SO EASY to throw together. Having a quick, go to, salad recipe to whip up is always a plus, especially for your next get together or potluck!

Poppy Seed Coleslaw Salad

This is a simple salad recipe that can be made in no time. Just get yourself a bag of coleslaw mix, a bottle of poppy seed dressing and a few bags of Top Ramen® noodles. That’s it! Didn’t I say it was easy?

Poppy Seed Coleslaw Salad

The best way to make this salad is to put the dressing in the fridge to get it cold. That way when you toss all the ingredients together, this poppy seed coleslaw salad will already be chilled and ready to serve. Crumble up the noodles, add them to a large mixing bowl, add the coleslaw mix and stir in the chilled poppy seed dressing, and you have yourself a quick, tasty salad.

There you have it… a simple, easy, delicious tasting salad that is sure to please! With every bite, you will have the crunchiness from the noodles, the tang from the dressing and the deliciousness of the coleslaw. Super easy, super quick and super tasty!

Ingredients
  

  • 1 16 oz bag coleslaw mix
  • 1 16 oz bottle poppy seed dressing
  • 2-3 packages Top RamenĀ® noodles (minus the seasoning packets)

Instructions
 

  • In a large mixing bowl, break up noodles and add to the bowl.
  • Toss in the coleslaw mix.
  • Add poppy seed dressing, stir until combined.
  • Enjoy!

6 tomatillos 4 jalapenos, stems removed 3 serranos, stems removed 2 cloves garlic, roasted ¼ onion ¼ cup water 2 teaspoons salt 2 avocado, diced ā…“ cup cilantro In a medium saucepan, add oil and heat over medium heat. Add garlic cloves and roast until soft. Remove and add to blender or Vitamix. In the same saucepan, add tomatillos, jalapenos, serranos and onion. Cover with cold water and bring to a boil over medium high heat until soft and the color has changed to a pale green. Remove tomatillos and continue boiling the peppers until pale green, if needed. Drain water, reserving ¼ cup. Add the cooked ingredients, salt and ½ cup water. Blend until combined and smooth. Lastly, add avocados and cilantro and blend until smooth. Serve with your favorite chips or top tacos, burritos, beef, chicken or your favorite Mexican recipes.
