Ingredients

Instructions

  • Preheat the oven to 325 degrees and spray a 2 quart baking dish with non-stick cooking spray.
  • In a medium sized skillet, heat a teaspoon of olive oil. Add diced jalapeños and cook until tender and slightly roasted.
  • Cut the cream cheese into cubes and place in the prepared baking dish.
  • Dollop the sour cream on top of the cream cheese and then sprinkle with seasonings.
  • Top with the shredded cheese, bacon, jalapenos, and green onions.
  • Bake in the preheated oven for 10-15 minutes or until the cheese is melted and bubbly.
  • Remove from the oven and stir to combine. Top with additional green onions, if desired.
  • Serve hot with tortilla chips or your favorite crackers.

Notes

  • Soften the cream cheese if needed: Room-temperature cream cheese will mix more easily after baking. If it's straight from the refrigerator, cutting it into small cubes helps it warm through faster.
  • Cook the bacon until crispy: Crispy bacon adds the best texture and holds up better when mixed with the creamy cheese.
  • Adjust the jalapeño heat: Most of the heat is concentrated in the white membranes inside the peppers. Remove them for a milder dip or leave some in for more spice.
  • Sauté the peppers first: That quick skillet step makes a difference in both flavor and texture, so don't skip it.
  • Shred your own cheddar: Freshly shredded cheese generally melts more smoothly than packaged shredded cheese.
  • Don't overbake: The dip only needs enough time for the cheese to melt and everything to heat through.
