Ingredients

Seasoned Chicken

Creamy Sauce

  • 10.5 ounce cream of mushroom soup
  • 1 cup plain yogurt
  • 1 cup H.E.B That Green Sauce, medium
  • 6 ounce crispy fried onions
  • 2 cups Monterey jack cheese, shredded, divided
  • 8 ounce fresh green beans, trimmed, cut into 1-2 inch pieces

Instructions

  • Preheat the oven to 375 degrees and spray a 9x13 baking dish with non-stick cooking spray. Set aside.

Green Beans

  • Bring a large pot of salted water to a boil over medium high heat.
  • Add trimmed green beans to the pot and parboil for 4-5 minutes. Drain and set aside.

Creamy Sauce

  • In a medium bowl, add soup, yogurt, and green sauce. Stir until combined.

Seasoned Chicken

  • In a dutch oven or deep skillet, add 1 tablespoon of olive oil and butter, and heat over medium heat.
  • Add chicken to the pan and sprinkle with seasonings.
  • Cook until the chicken is no longer pink. Remove, set aside.
  • Add remaining olive oil and saute onions until translucent.
  • Next, add minced garlic and continue sauteing for 2 additional minutes.
  • Add chicken, green beans, and 1 cup shredded cheese to the pan. Stir.
  • Pour sauce over the chicken mixture and stir to combine.
  • Place mixture into the prepared baking dish. Sprinkle with the remaining shredded cheese and top with the crispy fried onions.
  • Cover with aluminium foil and bake for 25 minutes.
  • Remove foil and cook for an additional 10 minutes.
  • Serve hot and enjoy!

Tips
  • Be sure to spray your dish with cooking spray to avoid sticking and make cleanup easier.
  • Using a Dutch Oven or a deep skillet helps reduce spatter and cleanup, and ensures you have plenty of room to work as you cook your chicken.
