Instructions

  • Preheat the oven to 375 degrees and spray a baking sheet with non-stick spray. Set aside.

Peach Filling

  • In a large bowl, add chopped peaches, sugars, lemon juice, cornstarch, and cinnamon. Stir until fully combined. Set aside and let sit while you make the toppings.

Cobbler Topping

  • In a medium bowl, mix together the flour, sugars, baking powder, and salt.
  • Now, add in the cut butter and boiling water.
  • Mix together until fully combined. Set aside.

Brown Sugar Pecan Topping

  • In a small bowl, stir together the light brown sugar, flour, and chopped pecans. Pour in melted butter and mix until fully combined.

Assembling the Cobbler

  • Pour the peach filling mixture onto the prepared baking sheet and top with cobbler topping.
  • Now, sprinkle the brown sugar pecan topping on top of the cobbler.
  • Bake in the preheated oven for 35-40 minutes or until the peaches are bubbly and the cobbler topping is golden and crispy.

Notes

  • Use ripe peaches. You want peaches that are ripe and flavorful but not overly soft or mushy.
  • Cut the peaches into similar-sized pieces. This helps them bake evenly.
  • Don't skip the cornstarch. The peaches release quite a bit of juice while baking, and the cornstarch helps thicken the filling.
  • Watch the topping near the end of baking. You want it golden and crisp without getting too dark.
  • Let it rest before serving. Giving the cobbler a few minutes to cool allows the peach filling to thicken slightly.
