Preheat the oven to 400 degrees and line a large baking sheet, or two regular baking sheets, with aluminum foil. Set aside.
In a large bowl, add the chicken and potatoes, and 1 tablespoon of olive oil. Toss to coat.
Sprinkle all the seasonings over the chicken and potatoes, toss.
Add bell pepper and onion. Stir.
Next add sliced sausage and remaining tablespoon of oil. Stir to coat.
Place mixture on the prepared baking sheet(s) and spread out in a single layer.
Bake for 40-50 minutes, or until the potatoes are tender.
Remove from the oven and enjoy with a side salad and crusty bread.
