Chicken Fried Rice

Ingredients

  • 2 chicken breasts cooked and chopped
  • 6 cups cooked rice (2 cups uncooked rice)
  • 1/2 cup onion diced
  • 1/2 cup carrots diced
  • 4 cloves garlic minced
  • 1/4 cup green onions diced
  • 2 Tbs oil
  • 6 eggs scrambled
  • 2 tsp sesame seeds
  • 3/4 cup soy sauce
  • 5 Tbs butter
  • 1 tsp pepper

Instructions

  • In a medium skillet, add oil. Saute onions, carrots, garlic and green onions over medium/low heat until cooked. Drain oil.
  • In another skillet, scramble eggs, chop into small pieces. Set aside
  • Cut cooked chicken breasts into small pieces. Set aside.
  • Cook rice according to package directions and set aside.
  • In a large skillet (I used a 12"), add butter, melt over low heat. Add chicken, rice, eggs, vegetables, sesame seeds, pepper and soy sauce. Mix well.
  • Cook over medium/low heat, stirring occasionally until done, approximately 15 minutes.
