Peach Blueberry Crisp

This delicious peach blueberry cobbler is easy to make and loaded with fresh peaches and fresh blueberries and has a crunchy brown sugar pecan topping. This crisp recipe is a family favorite!

Peach Blueberry Filling

Instructions

  • Preheat oven to 400°
  • Lightly spray a 9x13 baking dish or 3-quart baking dish. Set aside.

Crisp Topping

  • In a medium mixing bowl, whisk together flour and brown sugar.
  • Add 1 cup of butter and mix on low speed until crumbly, then add chopped pecans. Stir. Set aside.

Peach Blueberry Filling

  • In a small bowl, whisk sugar, cornstarch, salt, nutmeg and cinnamon together and set aside.
  • Peel and slice peaches and place sliced peaches and blueberries in a large bowl.
  • Add sugar mixture into the peach and blueberry mixture. Stir until the fruit is coated well.
  • Pour peach and blueberry mixture into the prepared baking dish.
  • Add the flour mixture on top of peaches and spread evenly.
  • Bake uncovered at 400° for 45-55 minutes, or until topping is golden brown.
  • Serve warm with a scoop of vanilla ice cream

Notes

  • You only need a light coating of nonstick spray for your baking dish. Don't use so much that it pools at the bottom.
  • Wash your blueberries just before you plan to use them. Washing berries in advance can cause them to mold.
  • Keep your butter cold when making the crumble topping. Cold butter creates that nice, crumbly texture.
