Instructions

  • Preheat the oven to 350° and line a baking sheet with parchment paper.

Sugar Cookies

  • In a large bowl, using an eclectic mixer, cream butter and sugar together until creamy, about 3 minutes.
  • Beat egg, vanilla and corn syrup into mixture until combined.
  • In a medium bowl, whisk flour, baking soda, baking powder and salt together.
  • Add dry ingredients into wet ingredients and mix.
  • Using a ½ inch cookie scoop, place rounded cookie dough on the prepared baking sheet.
  • Gently press each cookie down a bit.
  • Bake for 8-9 minutes.
  • Remove from the oven and let cookies sit on the baking sheet for a couple minutes then transfer to a wire rack to cool completely.
  • Once cooled, frost cookies.

Buttercream Frosting

  • In a medium mixing bowl, cream butter, milk and vanilla together. Gradually add powdered sugar and beat until smooth and creamy.
  • Frost cookies, then sprinkle with festive holiday sprinkles.
  • Let the frosting setup then place cookies in a container for storing and place parchment paper in between the layers.

Notes

  • Cream your softened butter until it's light, airy, and creamy for both the cookies and the frosting for the best texture.
  • Lightly spoon your flour into your measuring cup and level with a knife to avoid compacting the flour and using too much.
  • Remove your cookies from the oven after 8 or 9 minutes. They will look underdone. However, carrying over cooking time from the pan will help them bake to perfection.
  • Your cookies MUST be fully cooled before you add the frosting. Otherwise, it will melt on contact and won't stick to the cookies.
  • Mix your cookie dough until just combined and no further. This helps limit gluten formation and keeps the cookies as soft as possible.
