Preheat the oven to 350° and line a baking sheet with parchment paper.
Sugar Cookies
In a large bowl, using an eclectic mixer, cream butter and sugar together until creamy, about 3 minutes.
Beat egg, vanilla and corn syrup into mixture until combined.
In a medium bowl, whisk flour, baking soda, baking powder and salt together.
Add dry ingredients into wet ingredients and mix.
Using a ½ inch cookie scoop, place rounded cookie dough on the prepared baking sheet.
Gently press each cookie down a bit.
Bake for 7-9 minutes.
Remove from the oven and let cookies sit on the baking sheet for a couple minutes then transfer to a wire rack to cool completely.
Once cooled, frost cookies.
Buttercream Frosting
In a medium mixing bowl, cream butter, milk and vanilla together. Gradually add powdered sugar and beat until smooth and creamy.
Frost cookies, then sprinkle with festive holiday sprinkles.
Let the frosting setup then place cookies in a container for storing and place parchment paper in between the layers.
