Add chicken to a pot of water and boil over medium heat until chicken is cooked thoroughly. Remove from pot and shred.
In a large bowl, add shredded chicken and mayonnaise. Stir until combined.
Next, add grapes, red onions, green onions, water chestnuts, apple cider vinegar, salt and pepper. Stir to combine and place in the refrigerator to chill.
When ready to serve, stir chicken mixture and place desired amount of chicken salad on croissants. Top with lettuce, if desired, and enjoy.
