  • 12 ounce wonton wrappers
  • 12 ounce bacon
  • 8 ounce cream cheese, room temperature
  • 2 cups pepper jack cheese
  • 2 cups chopped whole rotisserie chicken
  • ¼ cup diced green onion
  • 2 tablespoons ranch seasoning
  • 2 tablespoons vegetable oil

Instructions

  • Preheat oven to 350°
  • Cut bacon into bite size pieces and cook until crispy. Drain and set aside.

Make the Wonton Cups

  • Lay each wrapper on a clean surface and brush each side with oil using a pasty brush.
  • Lay one wrapper over the opening of a muffin tin.
  • Coat the next wrapper as the first one and set it on top of the first wonton wrapper overlapping to create a diamond shape.
  • Press the center down to create a bowl into the muffin tin.
  • Repeat process with remaining wrappers.
  • Bake in the oven for 8-10 minutes until the edges are golden and crispy.
  • Remove from the oven and set aside.

Chicken Mixture

  • Combine and mix remaining ingredients together.
  • Spoon mixture into prepared wonton cups.
  • Return to the oven for 8-10 minutes or until the cheese has begun to melt.
  • Remove from the oven and drizzle with bbq or your favorite sauce.

Notes

Tips
  • Oil both sides of the cups for maximum crispness and no sticking.
  • Cool the bacon completely before chopping to ensure it's as crispy as possible.
  • Use room temperature cream cheese for easy mixing and thorough distribution of the filling ingredients.
  • Serve the wonton cups immediately for the best flavor and texture.
