In a large skillet or cast iron skillet over medium heat, melt butter then add rib eye, eggs, onions, diced green chilies, Rotel, seasoning and season with salt and pepper. Stir.
Scramble over medium heat until eggs are almost done. Turn heat off.
Heat up tortillas on stove over medium flame for a about 10 seconds on each side.
Place tortilla on a plate, add egg mixture to the center and top with cheese.
Fold tortilla by taking the bottom and pull over the mixture. Tuck in the sides and then roll into a burrito.
Heat oil in another frying pan over medium high flame and once oil shimmers, place a few burritos at a time in the oil.
Fry until golden brown, then turn over and fry until done.
Remove from pan and place on a plate lined with paper towels.
Optional: serve with salsa, sour cream, diced onions.
