  • Preheat the oven to 375° and spray a 9x13 or a 3-quart baking dish with non-stick cooking spray.
  • In a large bowl, add cooked rice, cream of mushroom soup, cheddar soup, milk, and black pepper. Stir until combined.
  • Gently stir the cooked chicken and cooked broccoli into the rice mixture.
  • Spoon mixture into prepared baking dish.
  • Sprinkle Parmesan cheese and sharp cheddar over the top, followed by the crushed crackers.
  • Bake for 30 minutes, or until the cheese is hot and melty, and the casserole is heated through.
  • Remove from the oven and enjoy!
