Pancakes Bites with Bacon

These pancake bites with bacon are made with a delicious homemade buttermilk pancake batter and crispy bacon. The crispy bacon is dipped in the batter and each pancake bite is deep fried to golden perfection, dusted with powdered sugar and dipped or drizzled with maple syrup.

  • Cook bacon until crispy in a large frying pan. Remove and place on a plate lined with paper towels. Break bacon in half. Set aside.
  • In a medium bowl, whisk flour, sugar, baking soda, salt and baking powder together. Set aside.
  • In a small bowl, whisk egg and buttermilk together until combined.
  • Pour wet ingredients into dry ingredients and stir gently. Batter will be lumpy.
  • In a large saucepan, heat oil over medium high heat.
  • Dip each piece of bacon into the pancake batter and add a few at a time into the hot oil.
  • Deep fry until golden brown on all sides, remove with a slotted spoon and place on a plate lined with paper towels. Repeat until all the bacon is used.
  • Serve hot with powdered sugar and maple syrup.
