Rachel Sandwich

  • 1 rotisserie roasted bone-in turkey breast
  • 8 slices deli swirl rye and pumpernickel bread
  • 4 slices Swiss cheese
  • 14 ounce bag Dole® coleslaw salad kit
  • cup softened butter
  • ¼ cup thousand island dressing


  • Heat a large frying pan over medium high heat.
  • Remove turkey breast off the bone and place on a plate until ready to use.
  • Butter one side of each piece of bread.
  • On the other side of each piece of bread, add a tablespoon (or more) of thousand island dressing.
  • Next, layer 4 slices of bread with cheese, turkey, coleslaw and the remaining 4 pieces of bread.
  • Grill one or two sandwiches at a time until golden brown on both sides then repeat with remaining sandwiches.
