The Rachel Sandwich is a hearty and filling sandwich made with turkey, swiss, thousand island dressing and coleslaw.
Servings: 4 Sandwiches
- 1 rotisserie roasted bone-in turkey breast
- 8 slices deli swirl rye and pumpernickel bread
- 4 slices Swiss cheese
- 14 ounce bag Dole® coleslaw salad kit
- ⅓ cup softened butter
- ¼ cup thousand island dressing
Heat a large frying pan over medium high heat.
Remove turkey breast off the bone and place on a plate until ready to use.
Butter one side of each piece of bread.
On the other side of each piece of bread, add a tablespoon (or more) of thousand island dressing.
Next, layer 4 slices of bread with cheese, turkey, coleslaw and the remaining 4 pieces of bread.
Grill one or two sandwiches at a time until golden brown on both sides then repeat with remaining sandwiches.
