Spinach and Artichoke Pasta with Chicken Sausage
This spinach and artichoke pasta is made with chicken sausage that is sliced and cooked with onions and garlic, fresh baby spinach, artichoke hearts and rotini pasta. So good and super easy to make.

In a large pot, bring pot of water to a boil over medium-high heat. Cook pasta according to the package for al dente. Drain, rinse and return to pot.
In a large skillet, heat olive oil over medium heat and add sausage. Add in onions and garlic. Cook until sausage is browned and onions are translucent.
Once cooked, add artichokes and crushed tomatoes.
Sprinkle with seasonings and stir until combined. Let cook for 6-8 minutes until the sauce starts to boil. Add spinach, stir.
Slowly stir mozzarella and Parmesan cheese. Stir.
Add sauce to pasta, stir and enjoy.
