Sausage Breakfast Casserole
A hearty, delicious and flavorful breakfast casserole recipe loaded with sausage, eggs, cheese, onions, bell pepper, jalapeños and seasoned perfectly.
Servings: 8 People
- 30 ounces potato rounds, frozen
- 1 pound hot Italian sausage, removed from casing
- 1 onion, diced
- 1 bell pepper, diced
- 1 jalapeno, diced
- 20 eggs, beaten
- 1 teaspoon pepper
- 1 teaspoon garlic salt
- 8 ounces pepper jack cheese, shredded
Preheat the oven to 350°. Prepare a 13x9 baking dish by spraying with nonstick cooking spray.
Add frozen potato rounds to the prepared baking dish. Set aside.
In a large frying pan, add Italian sausage, onions, bell peppers, and jalapeno. Cook until the sausage is no longer pink and the vegetables are tender.
In a large bowl, whisk eggs and add pepper and garlic salt. Whisk until well combined.
Spoon cooked sausage and veggies over the potato rounds and spread evenly.
Next, pour beaten eggs into the dish over the sausage and potatoes and sprinkle with shredded cheese.
Bake in the preheated oven for 50-55 minutes or until the egg is cooked through and cheese is melted and golden brown.
