Funfetti Cake

Ingredients

For The Funfetti Cake

  • 3 cups all purpose flour
  • tsp baking powder
  • 1 tsp baking soda
  • 2 cups sugar
  • 1 cup butter, room temperature
  • 2 tsp vanilla extract
  • 2 tsp cherry extract
  • 4 eggs, room temperature
  • 1 cup milk
  • 1 cup rainbow baking chips

For The Frosting

  • 16 oz cream cheese
  • 1 cup butter
  • 6 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp cherry extract
  • rainbow jimmies sprinkles

Instructions

  1. Preheat oven to 350° and grease two 8 inch round cake pans and dust with flour. Set aside.

For the Funfetti Cake

  1. In a medium bowl, whisk flour, baking powder and baking soda together. Set aside.

  2. In a large bowl, beat butter and sugar together until light and fluffy.

  3. Beat eggs into butter mixture, one at a time, until combined, then add vanilla and cherry extract.

  4. Add dry ingredients into the wet ingredients and mix until combined.

  5. Next, mix milk until smooth and then stir in rainbow baking chips.

  6. Pour cake batter into prepared pans.

  7. Baked for 30-40 minutes or until toothpick inserted in the center comes out clean.

  8. Remove from oven, place on a wire rack and let cool completely.

For The Frosting

  1. In a large bowl, beat cream cheese and butter together until smooth and creamy.

  2. Gradually add powdered sugar, two cups at a time, and beat until smooth.

  3. Add vanilla and beat until combined.

  4. Frost cakes once cakes have completely cooled.

  5. Add sprinkles to outside of cake, as desired.
