Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 green bell peppers, diced
  • 1 red bell pepper, diced
  • 8.3 ounce breakfast sausage links, sliced
  • ¾ teaspoon Slap Ya Mama
  • cup pinto beans, drained
  • 10 large eggs
  • ½ teaspoon pepper
  • ¼ teaspoon salt
  • 1 tablespoon milk
  • 3 slices pepper jack cheese

Instructions

  • In a large skillet, heat oil and add vegetables, stirring frequently
  • Add sausage and Slap Ya Mama. Cook until vegetables are tender and sausage is browned on both sides
  • In a separate pan, spray with cooking spray and add eggs, milk, salt, and pepper. Cook until eggs are fluffy
  • Add pepper jack cheese to eggs and stir until cheese is melted
  • Place eggs and pinto beans into sausage and vegetables mixture. Stir until fully combined
  • Serve immediately and enjoy!
