  • 3 cups all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp corn starch
  • ½ tsp salt
  • 1 ½ cup sugar
  • ½ cup brown sugar
  • 1 cup butter, softened
  • 2 eggs
  • 1 egg yolk
  • tsp vanilla
  • ½ tsp lemon extract
  • 2 tbsp lemon juice and zest from 1 lemon
  • 1 cup powdered sugar


  1. In a large bowl, whisk flour, baking soda, baking powder, corn starch and salt together.

  2. Beat butter and sugars together until creamy and fluffy.

  3. Beat in eggs and egg yolk, vanilla, lemon extract, lemon juice, and lemon zest.

  4. Mix dry ingredients into sugar mixture just until combined.

  5. Cover and chill dough for an hour.

  6. Preheat oven to 350° and line a baking sheet with parchment paper.

  7. Using a 1 inch cookie scoop, scoop cookie dough from bowl.

  8. Roll each cookie in powdered sugar, coating well.

  9. Place on prepared baking sheet.

  10. Bake 10-12 minutes. Let sit on cookie sheet for 2-3 minutes before transferring to a wire rack.
