Loaded Mashed Potato Bites

  • 3 Large Russet potatoes, (Costco sized) peeled & diced
  • 1/2 cup butter
  • 1/4 cup sour cream
  • 1 jalapeno, diced
  • 6-8 pieces bacon, crumbled
  • 1 cup sharp cheddar, shredded
  • 1 cup monterey jack cheese, shredded
  • 1/4 cup sliced green onions, diced
  • 1/2 tsp pepper
  • 1 tsp garlic salt
  • 1/2 tsp Slap Ya Mama

For the coating

  • 1 cup flour
  • 1 cup buttermilk
  • 1 egg
  • 2 cups Panko breadcrumbs
  • 2+ cups vegetable oil


  1. Using a large pot, add diced potatoes and diced jalapeños. Cover with water and bring to a boil

  2. Cook until fork tender, drain, and return to pot

  3. Add butter, sour cream, seasoning, pepper, and stir.

  4. Next, add cheese, crumbled bacon, diced green onions, and mix until combined

  5. When cool, use a tablespoon or cookie scoop, make into 1 inch balls

For the coating

  1. Heat oil to 375º in a medium heavy bottom pan or deep fryer

  2. In a small bowl, whisk together buttermilk and egg

  3. Dip/roll each ball in flour

  4. Next, add to buttermilk mixture and then into the Panko breadcrumbs

  5. Place in hot oil and deep fry until golden brown
