Vegan Banana Nut Muffins

  • 1 3/4 cups spelt flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/8 tsp salt
  • 1/2 cup coconut oil melted
  • 1/2 cup unsweetened almond milk
  • 3/4 cup organic pure cane sugar
  • 1/4 cup organic brown sugar packed
  • 1 Tbs vanilla extract
  • 1 cup ripe bananas mashed
  • 3/4 cup walnuts chopped


  1. Preheat oven to 400°. Spray large muffin pan with cooking spray (I used coconut oil), or line with baking liners.
  2. Whisk together flour, baking powder, baking soda, cinnamon and salt in a large mixing bowl and set aside.
  3. In a medium bowl, mix melted coconut oil, milk, sugar, brown sugar, and vanilla together until blended. Stir in bananas.
  4. Fold wet ingredients in to dry ingredients and mix with a spatula just until combined.
  5. Add chopped walnuts.
  6. Fill large muffin pan 3/4 full and bake for 20-25 minutes or until wooded tooth pick inserted comes out clean.
  7. Cool on a cooling rack for 10 minutes.
  8. Enjoy!
