Peppermint Sour Cream Softies

Ingredients

  • 3 cups all purpose flour sifted
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp corn starch
  • 1 tsp salt
  • 1/2 cup butter softened
  • 1 1/2 cups sugar
  • 1 cup sour cream
  • 2 eggs range free
  • 1 tsp vanilla
  • 2 tsp sugar
  • 1 tsp cinnamon
  • Peppermint Snow Mints from Hickory Farms┬«

Instructions

  1. Preheat oven to 400┬░.
  2. In a small bowl, mix sugar and cinnamon together, set aside.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, corn starch, and salt. Set aside.
  4. In a large mixing bowl, beat butter and sugar until creamy. Beat in eggs and vanilla.
  5. Add flour mixture, alternating with sour cream. Mix until combined.
  6. Using a 1 inch cookie scoop, drop onto greased cookie sheets, 2" apart.
  7. Lightly sprinkle with sugar/cinnamon mixture.
  8. Place 1 mint in the center of each cookie.
  9. Bake for 12 minutes.
  10. Remove from oven, let cool for 2 minutes.
  11. Place on wire rack to cool completely.
