Bacon Wrapped Jalapeno Popper Chicken

  • 4 chicken breasts, boneless, skinless
  • 1 large jalapeno, seeds removed, diced small
  • 4 green onions, sliced
  • 8 oz cream cheese, room temperature
  • 1 lb bacon
  • ½ tsp garlic powder
  • ½ tsp black pepper
  • cup sharp cheddar cheese, shredded


  1. Preheat oven to 375° and lightly spray a 13x9 baking pan with non stick spray. Set aside.

  2. Slice each chicken breast lengthwise, in half, stopping before slicing all the way through.

  3. In a medium bowl, beat cream cheese for 1-2 minutes then add diced jalapenos, green onions, sharp cheddar cheese, garlic powder and pepper. Stir until combined.

  4. Spread mixture on one side of chicken breast and then fold chicken back over mixture. Sprinkle with salt and additional pepper, if desired.

  5. Wrap each piece of chicken with 2-3 pieces of bacon to secure tightly.

  6. Place each wrapped chicken breast in baking pan and place in oven.

  7. Bake for 35-40 minutes or until chicken is cooked thoroughly and no longer pink and internal temperature is 165°.

  8. Turn on broiler and broil for an additional 5-7 minutes or until bacon is crispy. *Flip chicken over once the bacon is crispy to crisp up the other side, optional.

  9. Carefully remove from oven and enjoy!
