Rib Eye Nachos

Ingredients

  • 2-3 cups leftover rib eye, diced into 1/2" pieces (see notes for my garlic lime steak bites recipe)
  • 15-18 tortilla chips
  • 2 cups sharp cheddar cheese, shredded
  • 2 cups Monterey Jack cheese, shredded
  • Optional: jalapeno slices, salsa, avocado salsa, fresh cilantro, sour cream, onions

Instructions

  • Place tortilla chips on microwave safe plate.
  • Place a spoonful of diced rib eye on top of each chip.
  • Add a heaping spoonful of each type of cheese on top of meat.
  • Top each chip with a jalapeno slice.
  • Place in microwave until cook until cheese is melted, approximately 60-75 seconds.
  • Carefully remove and enjoy with your favorite toppings.
