Fried Rib Eye Breakfast Burritos

Ingredients

  • 2 cups leftover rib eye, cut into ½" chunks
  • ½ cup chopped onions
  • 1 Tbsp butter
  • 10 eggs, whisked
  • 3 tsp diced green chilies
  • 3 Tbsp Rotel®
  • 1 tsp Slap ya mama seasoning
  • 1 tsp garlic salt
  • ½ tsp pepper
  • ¼ tsp red crushed peppers
  • 2 cups shredded cheese, any kind
  • 8-10 flour tortillas, burrito size
  • 1 cup vegetable oil (might need more)

Instructions

  • In a large skillet or cast iron skillet over medium heat, melt butter then add rib eye, eggs, onions, diced green chilies, Rotel, seasoning and season with salt and pepper. Stir.
  • Scramble over medium heat until eggs are almost done. Turn heat off.
  • Heat up tortillas on stove over medium flame for a about 10 seconds on each side.
  • Place tortilla on a plate, add egg mixture to the center and top with cheese.
  • Fold tortilla by taking the bottom and pull over the mixture. Tuck in the sides and then roll into a burrito.
  • Heat oil in another frying pan over medium high flame and once oil shimmers, place a few burritos at a time in the oil.
  • Fry until golden brown, then turn over and fry until done.
  • Remove from pan and place on a plate lined with paper towels.
  • Optional: serve with salsa, sour cream, diced onions.
