Pour oil into a large cast iron pan, or frying pan, and turn heat to medium. Cut chicken into bite-size nuggets, set aside.
Using 3 different bowls, whisk flour and spices in one bowl. Whisk buttermilk and egg together in second bowl and crushed chips in third bowl.
Add a few pieces of chicken at a time into the flour mixture then into the egg mixture and finally into the crushed chips mixture. Set on a plate until ready to fry. Continue until all the chicken has been coated.
Once the oil is hot, fry about 8 pieces at a time turning over once browned. Should be about 5-6 minutes total. Remove the nuggets and place on a plate lined with paper towels. Continue to cook the remaining nuggets until all are cooked.
Serve with cool ranch dressing or dipping sauce of your choice.
Caution: These are "Freakin Hot" but oooh so good. The Ranch dressing cools the heat a bit. The chips themselves are so hot but once crushed and fried, not as hot. Enjoy!
