Avocado Bacon Potato Bites


For The Potato Rounds

  • 2 potatoes, rinsed, sliced 1/4" - 1/2" thick
  • 2 Tbsp olive oil
  • 1 tsp garlic salt
  • 1 tsp salt
  • 1 tsp pepper

For The Avocado Topping

  • 2 large avocados, pitted, diced
  • 1 heaping Tbsp salsa
  • 1 Tbsp red onions, chopped
  • 1 tsp garlic salt
  • 3 slices bacon, crispy, crumbled
  • 1/2 cup cheddar cheese, grated


For The Potato Rounds

  1. Preheat oven to 400° and spray a baking sheet with a non stick spray. 

  2. Rinse and scrub potatoes then slice about 1/4 inch thick. 

  3. Place into a resealable baggie and add olive oil, garlic salt, salt and pepper. Seal and shake to coat.

  4. Place on prepared baking sheet and pop in the oven for about 20 minutes, turning halfway through.

For The Avocado Topping

  1. In a medium mixing bowl, add diced avocados, salsa, red onions, and bacon. Gently stir to combine. 

  2. To assemble, remove potato rounds from baking sheet and place on a serving tray. 

  3. Sprinkle a little grated cheese on each potato and after cheese melts a bit, add a teaspoon or so of avocado mixture on top of the cheese.

  4. Garnish with a few pieces of crumbled bacon and enjoy.
