Avocado Bacon Potato Bites



For The Potato Rounds

  • 2 potatoes, rinsed, sliced 1/4" - 1/2" thick
  • 2 Tbsp olive oil
  • 1 tsp garlic salt
  • 1 tsp salt
  • 1 tsp pepper

For The Avocado Topping

  • 2 large avocados, pitted, diced
  • 1 heaping Tbsp salsa
  • 1 Tbsp red onions, chopped
  • 1 tsp garlic salt
  • 3 slices bacon, crispy, crumbled
  • 1/2 cup cheddar cheese, grated


For The Potato Rounds

  • Preheat oven to 400° and spray a baking sheet with a non stick spray. 
  • Rinse and scrub potatoes then slice about 1/4 inch thick. 
  • Place into a resealable baggie and add olive oil, garlic salt, salt and pepper. Seal and shake to coat.
  • Place on prepared baking sheet and pop in the oven for about 20 minutes, turning halfway through.

For The Avocado Topping

  • In a medium mixing bowl, add diced avocados, salsa, red onions, and bacon. Gently stir to combine. 
  • To assemble, remove potato rounds from baking sheet and place on a serving tray. 
  • Sprinkle a little grated cheese on each potato and after cheese melts a bit, add a teaspoon or so of avocado mixture on top of the cheese.
  • Garnish with a few pieces of crumbled bacon and enjoy.
