Soft Chewy Oatmeal Scotchies

  • Preheat oven to 375°
  • In a medium bowl, whisk flour, baking soda, salt and cinnamon together. Set aside.
  • Using a large bowl, beat butter and sugars together until light and fluffy.
  • Add corn syrup and vanilla, beat until combined.
  • Next, add eggs and beat until blended.
  • Gradually add dry ingredients into wet ingredients and beat until combined.
  • Stir oatmeal and butterscotch morsels into mixture.
  • Using a 1 ½ inch cookie scoop, drop onto ungreased baking sheet(s) and bake for 7 minutes for chewy cookies and 9 minutes for a more crispy cookie.
  • Remove from oven, let sit on cookie sheet for a couple minutes then remove to wire rack.
