Apple Pecan Fritter Bites

Ingredients

For the Fritters

  • 1 cup Gold Medal® unbleached all purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • 2 Tbs organic sugar
  • 1 tsp cinnamon
  • 1 ½ tsp Ener-G Egg Replacer + 2 Tbs warm water, equals 1 egg
  • ½ cup plus 1 Tbs unsweetened almond milk
  • 2 cups granny smith apples, peeled and chopped
  • ½ cup pecans, chopped
  • Vegetable oil

For the Fritters

  • Pour about 1 inch of vegetable oil in a skillet.
  • Heat over medium/high heat.
  • In a small glass bowl, mix together, egg replacer and warm water, set aside.
  • In a large mixing bowl, whisk together flour, baking powder, salt, sugar and cinnamon. Set aside.
  • Pour egg replacer and milk into dry ingredients. Stir until combined.
  • Add chopped apples and pecans, stir.
  • Drop by teaspoon into hot oil. Cook until golden brown on both sides.
  • Place on paper towels until cool.

For the Glaze

  • Whisk together powdered sugar, vanilla and milk in a small bowl until combined.
  • Once apple pecan fritters have cooled, take one at a time and add to the glaze.
  • Completely cover each fritter with glaze and place on a wire rack until glaze has set.
  • I put parchment paper underneath the wire rack for easy clean up.
