Crock Pot Cheesy Chicken Red Beans and Rice

chicken breasts,
boneless, skinless
1
onion,
large, chopped
4
slices
Three Alarm Cheese,
cut thick (from Sam's Club®) or use your favorite cheese
1
10 oz can
cream of mushroom soup
12
oz box
Zatarain's Red Beans and Rice®
32
oz
chicken broth
Salt and pepper to taste
Instructions
Spray a 6 quart crock pot with non stick spray and turn to high.
Add onions to bottom of crock pot.
Place chicken breasts on top of onions.
Season with salt and pepper.
Add cheese to the top of chicken and then spoon soup on top to cover.
Next, add red beans and rice and chicken broth.
Cover and cook for 6-8 hours on high, 10-12 hours on low.
