Pineapple Meatballs

Ingredients

For the Meatballs

  • 2 lbs ground beef
  • 1 cup plain bread crumbs
  • 3 eggs
  • 1/4 cup onion chopped
  • 1/2 cup evaporated milk
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp nutmeg

For the Sauce

  • 1 Tbsp oil
  • 1 tsp salt
  • 2/3 cup onion finely chopped
  • 1 large green bell pepper chopped
  • 3/4 cup ketchup
  • 4 Tbps vinegar
  • 3 tsp corn starch
  • 1 20 oz can pineapple in syrup chunk or crushed (reserve syrup)

Instructions

For the Meatballs

  1. Preheat oven to 350°F.
  2. In a large bowl, add all eight ingredients together and mix well.
  3. Form into small meatballs.
  4. Place meatballs on cookie sheet and cook for 20 minutes.

For the Sauce

  1. In a large skillet, heat oil. Add onion, green pepper and salt.
  2. Cook until tender, drain oil.
  3. In a small bowl, combine ketchup and vinegar, mix well.
  4. Add to skillet.
  5. In a small bowl, combine reserved pineapple syrup and cornstarch, mix well.
  6. Add to skillet and cook for 3-5 minutes, or until mixture thickens.
  7. Stir in pineapple chunks, or crushed pineapple, and simmer for 3 minutes.
  8. Add meatballs and cook until heated through.
  9. Put into a serving bowl, garnish with green onions, and serve.
