Apple Pecan Bake

Ingredients

  • 1 cup flour
  • 1 1/2 cups light brown sugar firmly packed
  • 1 tsp cinnamon
  • 2 tsp vanilla
  • 2 eggs
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups apples chopped, peeled (I used Granny Smith)
  • 2 cups pecans chopped

Instructions

  1. Preheat oven to 350°F.
  2. In a medium mixing bowl, beat eggs until blended.
  3. Add flour, brown sugar, cinnamon, vanilla, baking soda, salt until well combined.
  4. Stir in apple and pecans.
  5. Add to a greased 2 1/2 quart baking dish and bake for approximately 30 minutes or until toothpick inserted in the center comes out clean.
  6. Let cool for 10 minutes. Serve warm with ice cream.
