Apple Pie Cookies

These apple pie "cookies" are delicious and loaded with all the classic flavors of homemade apple pie in a easy hand-held treat, and they are super easy to make.

  • In a medium saucepan over low heat, bring water, cornstarch, sugar, cinnamon, and lemon juice to a boil, stirring constantly.
  • Continue stirring for 3-4 minutes until the sauce thickens up.
  • Add apple pieces to the saucepan, stir and let simmer for 8-10 minutes.
  • Remove from heat and let cool
  • Preheat the oven to 375° and line a baking sheet with parchment paper. Set aside.
  • On a lightly floured surface, roll pie crust out smoothly.
  • Spread cooled apple mixture over pie crust in an even layer.
  • Roll the second pie crust out on a lightly floured surface and slice pie crust into thin strips.
  • Place the strips in a lattice pattern over the top of the apple filling.
  • Using a round cookie cutter or biscuit cutter, cut out “cookies” and place on the prepared baking sheet.
  • In a small bowl, whisk egg and water together. Brush egg wash over the top of the cookies and sprinkle with coarse sugar.
  • Bake for 15 minutes, or until cookies are golden brown.
