These delicious homemade egg rolls are made with leftover chopped barbecue beef brisket and a delicious cream cheese mixture, then fried to crispy, golden perfection. So easy, so delicious.

  • In a medium bowl, beat cream cheese until smooth, about 2-3 minutes.
  • Add chopped brisket, jalapenos, and cheese. Stir until combined.
  • Heat oil over medium high heat to 375°.
  • Add a heaping tablespoon of brisket mixture into the center of the egg roll wrapper.
  • Wet the edges of the wrapper with water.
  • Bring the two sides over the mixture, then start rolling it up from one end all the way to the other end to seal.
  • Continue until all the mixture is used and repeat with remaining egg rolls.
  • Place a few egg rolls at a time into the hot oil and fry until golden brown on all sides.
  • Remove from the oil and place on a plate lined with paper towels until all the egg rolls are cooked.
  • Serve with your favorite dipping sauce.
