Mini Pancake Sausage Bites

These delicious mini pancake sausage bites are a delicious breakfast or brunch recipe. Cooked sausage links are cut into pieces and dipped in homemade pancake batter. Next, they are deep fried to golden perfection, dusted with powdered sugar and drizzled with syrup. So easy and delicious.

  • Cook sausage in a large frying pan. Remove and place on a plate lined with paper towels.
  • Cut sausage links into 3 pieces. Set aside.
  • In a medium bowl, whisk flour, sugar, baking soda, salt and baking powder together. Set aside.
  • In a small bowl, whisk egg and buttermilk together until combined.
  • Pour wet ingredients into dry ingredients and stir gently. Batter will be lumpy.
  • In a large saucepan, heat oil over medium high heat.
  • Dip each piece of sausage into the pancake batter and add a few at a time into the hot oil.
  • Deep fry until golden brown on all sides, remove with a slotted spoon and place on a plate lined with paper towels. Repeat until all the sausage is used.
  • Serve hot with powdered sugar and maple syrup.
