These delicious bacon wrapped jalapeno poppers are stuffed with a creamy cream cheese mixture, then completely wrapped in bacon, and oven baked to crispy perfection.
Preheat the oven to 325 degrees and line a baking sheet with aluminum foil. Place a wire rack on top of the baking sheet and spray with non-stick cooking spray. Set aside.
In a medium bowl, mix cream cheese, cheddar cheese, crumbled bacon, and green onions together until combined.
Place a tablespoon or two of the cream cheese mixture into the hulled out jalapeno.
Take one slice of bacon and wrap around the jalapeno lengthwise (to hold in the cheese mixture).
Then wrap two more slices of bacon around the jalapeno to cover it completely. Use toothpicks to hold the bacon in place.
Repeat with the remaining jalapenos.
Place the bacon wrapped jalapenos on the prepared baking sheet and wire rack.
Cook for 35 minutes then flip the jalapenos over with tongs and cook for another 35 minutes or until the bacon is crispy. Ovens vary so time might need to be adjusted.
Brush barbecue sauce over the jalapenos, if desired, and cook for another 10 minutes.
Remove from the oven and serve with your favorite side dishes.
