- 3 pound beef chuck roast
- 1 medium onion diced
- 1 teaspoon Slap Ya Mama seasoning
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 15 ounce can red enchilada sauce
- 3.7 ounce can Chipotle peppers in Adobo sauce (only need a couple peppers)
- (2) 11 ounce cans Southwestern style corn, drained
Spray a 6-8 quart crock pot with non-stick cooking spray.
Place diced onions in the bottom of the crock pot.
Next, place chuck roast, seasonings, red enchilada sauce and Chipotle peppers.
Cover and cook on high for 5-6 hours.
Add corn, cover and continue to cook for another hour.
Serve with rice or over mashed potatoes. Salt and pepper, to taste.
