6 tomatillos 4 jalapenos, stems removed 3 serranos, stems removed 2 cloves garlic, roasted ¼ onion ¼ cup water 2 teaspoons salt 2 avocado, diced ⅓ cup cilantro In a medium saucepan, add oil and heat over medium heat. Add garlic cloves and roast until soft. Remove and add to blender or Vitamix. In the same saucepan, add tomatillos, jalapenos, serranos and onion. Cover with cold water and bring to a boil over medium high heat until soft and the color has changed to a pale green. Remove tomatillos and continue boiling the peppers until pale green, if needed. Drain water, reserving ¼ cup. Add the cooked ingredients, salt and ½ cup water. Blend until combined and smooth. Lastly, add avocados and cilantro and blend until smooth. Serve with your favorite chips or top tacos, burritos, beef, chicken or your favorite Mexican recipes.

This smoked corn on the cob recipe is super easy to make and is the perfect side dish for all your favorite main dishes. It's a great side to serve for backyard BBQs, potlucks, and family dinners.

Ingredients

  • 6 fresh ear of corn
  • ½ cup butter, room temperature, cut into small pieces
  • 2 tablespoons Slap Ya Mama seasoning
  • 1 tablespoon black pepper

Instructions

  • Preheat the smoker to 450° for 15 minutes.
  • Pull back husks and remove the silks on each ear of corn.
  • Add butter randomly over corn, rub in and then sprinkle corn with seasoning and pepper.
  • Pull husks back in place and tie each ear of corn with thin strips of the husks.
  • Place corn directly on the grill and cook for 25-30 minutes until corn is tender, turning occasionally.
  • Remove corn from the grill, remove the husks, place on a serving tray and add additional butter, if desired, then enjoy!
