Cheesy Taco Pasta

Cheesy Taco Pasta is a super simple and quick meal that is loaded with flavor. A hearty ground beef and pasta recipe that that is easy to make and the leftovers are even better.

  • In a Dutch oven, cook pasta to al dente according to package directions. Drain and set aside.
  • In the same pan, cook ground beef and onions until beef is thoroughly cooked and onions are tender. Drain grease and place back into the pan.
  • Sprinkle taco seasoning over the meat mixture and then add water. Stir to combine and let cook for 5 minutes.
  • Add the remaining seasonings, corn, black beans, Rotel, and enchilada sauce. Stir and let simmer for 10 minutes.
  • Add the cheese and sour cream. Stir to combine. Next, add the pasta and stir until fully incorporated.
  • Serve immediately and enjoy.
